It is no coincidence that the method used to bake this bread, steaming, is similar to one used by the native Indians of New England, who taught us how to use corn as a grain for bread. The most famous of our region's breads, this wholesome blend of wheat, rye, and corn flours is suitable for our diets today as it was 300 years ago.
Steaming bread in the slow cooker is a terrific, hassle-free way to bake bread of all kinds. Traditionally, the batter for this brown bread was poured into coffee cans and placed in deep kettles filled with water, then hung for hours over the fire to steam. Serve it with New England Baked Beans (opposite page) or toasted for breakfast with cream cheese.
Like steamed Boston brown bread, this baked version is quickly mixed together and makes a dense, fragrant loaf.
Rye bread flour is sold at natural foods stores, specialty food stores and some supermarkets.
Using canned beans instead of dried greatly reduces the cooking time for this New England specialty, but you can use dried beans instead (see page 365 for soaking instructions).
A unique no-knead loaf developed for baking in coffee cans to create that special mushroom shape, this white bread is a savory loaf that fills the kitchen with an incredible aroma while it bakes. Since it takes only one rise in the molds, you can plan on 2 hours from mixing to table. In my travels around the United States, home bakers most often surprise me when they tell me this is their favorite bread recipe. It utilizes creamy evaporated milk, which has 60 percent of its water removed and gives the bread an especially delicate, moist texture. I think you will find it exceptionally easy to prepare, and each variation is as good as the master recipe. I use two glass baking canisters in lieu of coffee cans, which are not so often readily available.
If you’re looking for a simple recipe for a tender sandwich bread—the kind of loaf that’d be great turned into a grilled cheese or crunchy croutons—this is it. This recipe from Bryan Ford is his Master Bread Dough, rolled into a tight log and baked until golden brown. We recommend slicing it and then freezing in a resealable plastic bag or airtight container for instant toast.
