This combination of sweet, succulent halibut and spring vegetables in a golden saffron broth is visually seductive, while the earthy fragrance of saffron, favas, and mushrooms is intoxicating! Paula Wolfert’s easy method of preparing fava beans makes this dish much easier to prepare.

The halibut is brined briefly in salt water, which seasons it all the way through.

With the mercury rising, who wants to feast on a winter stew? Lighten up with this dish from Sondra Bernstein, author of The Girl & the Fig Cookbook (Simon &Schuster). It features fresh herbs and veggies and a protein-packed halibut fillet. Then, instead of hitting the couch to digest, you can hit the pavement for an after-dinner stroll.

Every spring when the first crates of fava beans are delivered to the kitchen at Piperade, I can almost hear the collective groan from my kitchen staff all the way from my home twelve miles away. I like favas and use them as often as I can when they are in season, but I have to admit they are labor-intensive, requiring both shelling and peeling. However, from my perspective—and judging from the number of orders we get from our guests—they are worth the work. At home, I hand them to my sons to shell while they watch a baseball game on TV, or I enlist guests before dinner. This recipe is simplicity itself and allows the sweet, nutty flavor of the favas to shine. Try to find small beans; older, larger favas are too starchy to use here.

This unusual pesto variation, adapted from a recipe by Colman Andrews in his book Flavors of the Riviera, cries out for grilled or roasted lamb, but you will discover many other ways to use it. In fact, it’s perfectly delicious on simple grilled bread with a glass of white wine or rosé.

These mint disks are adapted from a recipe passed on to me by Elizabeth Falkner, the owner of San Francisco’s deservedly popular Citizen Cake bakery. The mixture is simple to put together, and you can adjust the mint flavor to your liking. Taste a bit and add more if you wish, as mint extracts and oils vary. I make my Peppermint Patties very minty, which is especially important when they’re crumbled into deep, dark chocolate ice cream, a combination I call “The Girl Scout Cookie Effect.”

Guests are often surprised by the fresh mint flavor of this ice cream. The trick is adding raw chopped mint after the ice cream is cooled.

The bean purée may thicken when chilled. Loosen it back up with a splash or two of water or stock.

Recipes
Since lima and fava beans have a shorter growing season than most local tomatoes, we've given frozen edamame, available year-round, as an alternative to make this recipe more versatile.

Recipes
Fava beans most likely require a trip to a farmers’ market and take a while to peel. Sugar snap peas cut into bite-size pieces are a fine alternative.

Piled high with softened leeks and fresh fava beans, this tartine might—might!—make you forget about avocado toast.
